I often get asked what my Chia Seed Pudding recipe is. At my coffee shop, The Cabin Drive Thru in Stevenson, WA, this is one of our most popular items. This is a healthy and satisfying meal. It's also gluten-free and raw-vegan, as well. Often people ask "what is a chia seed?". Well, it's a seed from a plant grown in southern Mexico. They are small and super absorbent. It's also known for having some medicinal properties. I first discovered the chia seed, when I was running ultra-marathons. I read somewhere that runners found it helpful to put in their water bottles when running long distances for hydration and energy. I fell in love with these little gems. When I discovered Chia Seed Pudding, that was even better tasting. Chia seeds offer nutritional value with Omega 3 Fatty Acids, protein, antioxidants and fiber. Also as a runner, the Magnesium and Potassium levels are helpful.
I often get asked, how do I make my Chia Seed Pudding. I make a very basic recipe and then add all of the amazing ingredients that I'm in the mood for. I also LOVE to add essential oils to flavor my chia seed creations.
The BASE: I use a 3 to 1 ratio. 3 Parts Liquid to 1 part Chia Seeds. It's that simple. I add a dash of Organic Vanilla Syrup and stir rapidly. (this is the most important part is the stirring immediately) Then I let I set (about 30 minutes or more) and FINALLY add your FAVORITE TOPPINGS!! Many recipes have you add the sweetener to the base. I prefer to add my own sweetener to the topping.
The Liquid in the Base: I use an alternative milk or a mixture of alternative milk and fruit puree. I also love to add essential oils to this base. Some of my favorite essential oil flavors for this: Lemon, Orange, Cardamom, Tangerine.
I love all kinds of berries, nuts, fruit combos and nuts as toppings. Sometimes I create a dessert and add sundae toppings to the base. A great healthy alternative to ice cream!
